Chicken In the Pot
Nothing feels better than chicken soup. Especially if its not super salty, has less than 10 ingredients, takes just about an hour to prepare, and can feed you for a week. Check this out.
CHICKEN IN THE POT
1 whole chicken
2 small yellow onions, quartered
Chopped garlic
Fresh ginger, chopped
4-5 peeled Carrots
2 tbsp Curry powder
8 cups low sodium chicken broth - enough to fill the pot.
2 ears corn
1 container baby bella mushrooms, sliced
PRO TIP: You never cover chicken soup.
IN a soup pot. Add chicken, onions, garlic, ginger, carrots, curry + broth. Cook for one hour on medium high, simmering / not boiling. Remove chicken – it should be completely cooked thru.
Add peeled and sliced sweet potatoes. Simmer for 15 minutes while chicken cools. Turn heat off. Pull chicken and re add to pot. Soup is done. Make matzoh balls according to package in separate pot.
