Trout, Sautéed Miso Broccoli with Spicy Honey, Basil & Lemon
Ruby red trout is my go to fish, even moreso than salmon. I buy it by the half pound, have the butcher cut it into mini pieces 2-4oz like a deck of cards and snack on it or serve it for dinner. See my “7-minute salmon snacks,” and this is the same technique, the fish just gets air fried, drizzled with some coconut aminos and whatever seasoning and zapped on 450 for 7 minutes. The other stuff is equally uncomplicated, see below.
Trout, Sautéed Miso Broccoli with Spicy Honey, Basil & Lemon
4-8oz Portions, Salmon or Ruby Red Trout (*you do you boo)
coconut aminos
coconut oil
1/2 shallot chopped/diced
1c broccoli finely chopped
chicken or vegetable stock or bone broth
1 tablespoon miso
1 tbsp gochujang or siracha
1/2 tbsp honey
lemon
fresh basil for garnish
fresh sage or thyme
Put fish in air fryer for 7 - 8 minutes, season with coconut aminos and seasoning of choice. While fish is cooking, hot pan, oil, saute shallot until translucent, add the broccoli. When it gets browned but not too brown, add the stock. Cover, lower heat, steam. In a small bowl, combine sriracha, honey, miso, sprinkle of lemon juice. Paint the bottom of bowl with the sauce. Serve the broccoli atop and the fish. Garnish with fresh basil, drizzle more sauce and squeeze of lemon juice. Enjoy.
