Roasted Chili Eggplant

Still crushing on my air fryer but if you dont have one, don’t fret. Preheat oven to 375 or 400 degrees on convection bake or 400 degrees in air fryer. Halve eggplant + score with sharp knive so oil can penetrate skin. I used Trader Joes Crunchy Onion Chili Oil. Brush atop eggplant liberally. Roast for 7-12 minutes until it is tender. Remove. Flesh should be tender enough to scoop out with a spoon.
