Kale Chip Stuffed Squash
Acorn squash, halved - seeds removed + saved
2 anchovy filets
Brads Kale Chips (i like cheddar)
Olive or Sunflower Oil
Preheat oven to 400 degrees or use air fryer on high 400 degrees 15 minutes. Halve squash, save seeds, sprinkle them with oil and roast alongside squash. Put anchovy in center of squash so they melt. Roast in oven until fork tender. If you want to speed up process, zap in microwave for a few minutes first. Top squash with kale chips and crunchy seeds. YUM.
