black truffle chicken

I made a simple mushroom duxelles with chopped truffles. Can add herbs. Basically just really fine chop sauté with butter. Stuff under chicken skin. Season skin salt and a mottled melted butter. Roast depending on size. i suggest Urbani truffles buy canned at Dean deluca Gourmet garage or other specialty grocers
