Better for You Bagels *GF, high protein, low carb
If you’ve seen the high protein bagel craze via TikTok or IG, #same, and I finally tried it out after being tired of the constant bloat and gloat of gluten and dare I say KETO 60-calorie buns from the grocery store, gross. I did a deep dive and tried different flours, binders, dairy sources and so I’m sharing, below. The image looks a little sad, but don’t let it fool you, as looks sometimes do, these are gooooood.
1 cup cottage cheese or greek yogurt
*I prefer taste of CC but texture of greek yogurt, you could blend the CC but sounds like work1 cup GF (or regular flour)
* I got creative here and like 1/3C GF flour, 1/3C flaxseed, 1/3C Psylium
(more nutritious but also less fluffy, test out what feels right for you, if you want to keep it simple, just use flour)1/4 tsp baking powder

Coconut oil spray
In a small bowl, mix cottage cheese or yogurt with equal parts flour (or flour mixture) and baking powder. Kneed into a cohesive “dough ball.” Cut into four equal pieces and roll into balls. Poke the middle like a bagel donut hole. Put foil on bottom of air fryer and spray with coconut oil or it will stick. Place dough balls in, spray with coconut oil, top with seasoning and air fry for 10-15 minutes at 350 degrees. You can sub “egg wash” for coconut oil but not my vibe.
