Vegetarian Stew with Broccoli, Cabbage, Onion, Capers & Harissa

I love a veggie stew. Light enough, but filling, healthy, wealthy, wise! You can add in a carb in whatever way feels right or put a piece of protein atop this but this is hearty enough as is. This is also a great way to clean out the fridge so if its looking a little wilted, throw it in the pot.

  • 1/2 head of cabbage sliced
    1 sweet onion, sliced

  • 1 broccoli crown / florets

  • 1/4 cup harissa

  • chicken or veggie bone broth

  • potato / cauliflower (a higher starch veggie is nice) OR chickpeas

Preheat oven to 350 degrees. Heat an oven safe pan over medium high heat, coconut or olive oil. Saute onion and cabbage. Once browned, add broccoli, and/or other vegetables. Add harissa, stir. Add broth to cover vegetables. Cook until broth is evaporated and veggies are soft. Serve over toasted ciabatta or any carb of choice, or with a protein on top, or as is, as I did! Grated parmigiana is also a nice touch if you have on hand.
