20 Minute GF/SF One Bowl Ooey Gooey Chocolate Cake

My nieces were coming over last minute and I was summoned to make a cake, which in my book means no sugar and no flour but extra chocolate. And so I went on my merry way, just to get a call back moments later, no nieces, but lots of cake! This was divine. Only one bowl needed, which makes it taste even better, less clean up!

  • 1 cup semisweet or 70%+ chocolate (chips, bars, doesn’t matter)

  • 1/2 cup unsalted butter)

  • 3/4 cup monk fruit sugar

  • 3 eggs

  • 1/4 tsp salt

  • 1/4 tsp vanilla extract

  • 1/4 tsp almond extract

  • 1/3 cup cocoa powder (I prefer dutch processed)

  • ice cream, whipped cream, or powdered sugar to serve

Preheat oven to 375 degrees. Butter a round baking dish, or any dish, or use sprayed parchment paper to line baking dish and prevent sticking. Melt the butter with the chocolate in the microwave or in double boiler. Mix until combined. Add in monk fruit sugar, salt and extracts. The mixture should be a bit cooler now. Add in one egg at a time making sure to beat them and mix thoroughly (you can also beat eggs in a separate bowl and add in slowly while stirring into chocolate mixture). When eggs are combined, do not overmix, add in cocoa powder. Stir lightly. Pour mixture into greased baking pan. Bake for 18 minutes. Remove from oven and onto a wire rack or separate plate. Allow to rest, cool, set. Serve with whatever you wish.
