I really wanted to hate this wacky fitfluencer food frenzy but these noodz are really yum. Crunchy to the bite, low cal, easy to make. They’re like tofu and basically absorb whatever they are swimming in. Pick your poison. I wanted something salty. I’ve also eaten them cold tossed them with spicy gochujang sauce + sesame seeds for a little summer salad.

In a medium saute pan on high heat, melt 2 anchovy filets. Palmini noodles are meant to be “drained” but this is an extra step and I have never done so. If you don’t train them, they are super Al Dente but I like a little bite. Melt anchoives. Add 1/4 cup of eggplant spread. I also like to add 1 tsp coconut oil because the extra fat / sweetness of coconut with all of the salt makes the dish richer and the palmini noodles are literally 60 calories in the can. Toss in noodles to combine. Throw in some spinach. Let it wilt. Voila.
