Seared Sirloin, Shallot, Salsa Verde

Preheat oven to 350 degrees. On stove top, heat castiron pan til smoking hot. Add olive oil.

Add rosemary, fresh thyme and sage leaves. Sear sirloin both sides until edges are golden. Add anchovy to oil. Baste steak in melted anchovy and oil. Remove herbs to side plate. Put cast iron in oven to cook thru to desired temperature. About 5 minutes for medium. While cooking chop fresh parsley, lemon zest, anchovy, shallot finely. Put in bowl with olive oil, salt, pepper and lemon juice. A hit of dijon mustard for creaminess and touch of sherry vinegar for more acid. Remove steak. Serve with salsa verde, sauteed spinach. Voila. Livdelicioius in less than 10 minutes.
