Eggplant, Crispy Sage, Sesame, Anchovy, Lemon + Honey
When the weather gets cold, all I want to do is curl up on the coach with a glass of wine and a plate of roasted veggies. Mission accomplished. This was incredibly good.
1 eggplant
Sesame Oil
Lemon Zest
Air Fryer (see gift guide)
Honey (I use Bushwick Kitchen Meyer Lemon Honey)
2-3 Anchovy Fillets in Oil
Fresh Sage Leaves
Sesame Seeds (can use TJ Everything Seasoning)
I always suggest an air fryer, see gift guide, but if using an oven - preheat to 400 degrees. Slice eggplant lengthwise thin, but not too thin. Can pre salt to remove excess water and let drain. Pat dry. OR just slice and lay in air fryer or baking sheet. Top with anchovy filets (can halve them or just throw atop). Add torn sage leaves, drizzle generously with sesame oil, top with seeds or seasoning. Air fry for 15 minutes or convection bake for 15-20, until crispy but tender. Air Fryer is key here because you will get some crunchy, some tender consistency. Remove from oven. Plate. Drizzle with honey and lemon zest. Serve Hot.
